Healthy Samoa Waffles
It’s currently Girl Scout Cookie season, and I truly couldn’t be happier. I have literally been obsessed with Samoas since the dawn of time, so I knew I just needed to make a recipe inspired by them!
Enter these Healthy Samoa Waffles: vanilla waffles topped with chocolate chips, toasted coconut flakes, and an almond butter caramel sauce! Now of course, I have two packages of Samoas in my pantry as we speak, but these waffles are a great move if you’re in the mood for a little treat at breakfast time.
Healthy Samoa Waffles:
INGREDIENTS
-3 tbsp gluten free flour
-1-2 scoops vanilla flavored protein powder
-1/2 tsp baking powder
-1 egg
-1/3 cup milk (I personally go for cashew or almond!)
-1/4 tsp vanilla extract
Almond Butter Caramel Sauce:
INGREDIENTS
-1 tbsp creamy almond butter
-1 tbsp maple syrup
-1 tbsp milk (again, I usually go for cashew or almond milk)
Additional Toppings:
-1 tbsp chocolate chips
-1 tbsp toasted coconut flakes
INSTRUCTIONS
Mix flour + protein powder + baking powder in one bowl, and whisk egg + milk + vanilla extract in another
Pour the wet ingredients into the dry ingredients, and mix until a batter forms. The batter will be pretty thick, and you may want to add some additional milk, 1 tablespoon at a time
Heat your waffle maker and allow batter to sit for about 5 minutes. Once waffle maker is heated, pour in your batter. This recipe will make either 1 large waffle or 2 mini waffles
While your waffles are cooking, prepare the almond butter caramel sauce by simply stirring the creamy almond butter + maple syrup + milk together in a small bowl, and allow to sit in the fridge for a few minutes to thicken
Once waffles are done cooking, top with chocolate chips + toasted coconut flakes + almond butter caramel sauce. I was personally fine with just the caramel sauce on top, but feel free to add some additional maple syrup as well!
